(Whatever You Desire) Muffins

Is it blueberry muffins you want, or chocolate, or raspberry, or blackberry, or even a mix of all of these?

Well, do I have some fantastic news for you.

This simple muffin mix is easy to make and you can add whatever your heart desires (in reason and that would normally go in a muffin).

In these ones, I add hazelnut, chocolate, and caramel pieces.

Yup, so many things, but absolute perfection!

(At least I thought so).

Makes About: 16-18 muffins

Takes about 1 hour

Difficulty: 1 out of 5 (so easy a responsible child could put it together)


Prep:

Preheat the oven to 400 degrees F (205 degrees C) and line a muffin tin with paper liners.


Ingredients:

2 cups of all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup raw sugar (or granulated sugar)

1 egg

1 teaspoon vanilla extract

1 cup milk

1/4 cup vegetable oil

1 cup of (or whatever you prefer in your muffins


Ingredients:

- Step 1 - Combine The Dry Ingredients

In a large bowl, using a hand whisk, combine the 2 cups of flour, 2 teaspoons of baking powder, 1/2 teaspoon of salt, and 1/2 cup of raw sugar and then set aside until needed.

- Step 2 - Combine Wet Ingredients

In a medium bowl, whisk together 1 egg, 1 teaspoon of vanilla extract , 1 cup of milk, and 1/4 cup of vegetable oil until well combined.

- Step 3 - Combine the Wet Ingredients and Dry Ingredient

Add the wet ingredients into the dry ingredients.

And the whisk until smooth, but only until it is smooth, not anymore.

- Step 4 - Add in the Pieces

Add the 1 cup of whatever you like.

I would recommend any type of berry, chocolate, or nuts. However, if you do use berries, I would toss them in about 1-2 tablespoon of flour until they are coated before adding them into the batter.

Mix just until all your pieces are well dispersed.

- Step 5 - Fill the Muffin Tin and Bake

Using a large spoon or ice cream scoop, fill each muffin paper about 2/3 of the way full.

And then bake for about 20-25 minutes. Using a toothpick, check to see if they are complete; if not, add a few more minutes.

- Step 6 - Enjoy!

Once complete, let the muffins cool slightly in the tin and then remove them to cool completely on a cooling rack.

Then, eat as many as you like, because these are healthy, right?
