Lemon Poppy Seed Muffins

These are fresh, soft, and so delicious and exactly what you want to find in a bakery. And! They are super easy to bake and also fast. Hope you enjoy!

Prep:
Preheat the oven to 400 degrees F (204 degrees C) and lay paper liners in a muffin pan. Ingredients:
Muffins
1/2 cup (110 grams) greek yogurt
2 1/2 cups (315 grams) all-purpose flour
1/2 cup (110 grams) granulated sugar
1/4 cup (60 grams)vegetable oil
2 large lemons
1/2 cup (113 grams) unsalted butter - room temperature
2 teaspoon vanilla extract
2 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3-4 tablespoons poppy seed
2 eggs
Glaze
4 tablespoons powdered sugar
Lemon juice
Instructions:
Step 1 - Make Lemon Sugar
Place the 1/2 cup of sugar and the zest from 2 large lemons into a small bowl and press the two ingredients together until the sugar turns yellow and becomes infused with the lemon.
Once done, set aside until needed.
Step 2 - Cream the Butter
Place the 1/2 cup of butter into a large bowl and cream for about 3-4 minutes until smooth. Add in the lemon infused sugar and mix for another 2-3 minutes until like and fully.
Step 3 - Add the Eggs
Add one egg at a time, mixing well between each addition, scraping the bowl down periodically. Step 4 - Add Yogurt and Vanilla Extract
Next, add in the 1/2 cup greek yogurt and the 2 teaspoons vanilla extract into the sugar mixture and mix until combined - about 30 seconds
Step 5 - Add the Oil
While the mixer is still on, add the 1/4 cup oil and mix for another 30 seconds and then set the wet ingredients to the side. Step 6 - Combine the Dry Ingredients
In a medium bowl, combine the 2 1/2 cups all-purpose flour, 2 1/2 teaspoon baking powder, 1/2 teaspoon baking soda, and the 1/2 teaspoon salt until well combined. Step 7 - Combine the Wet and Dry Ingredients
Once the dry ingredients are mixed, dump them into the wet ingredients into the wet ingredients and using a spatula, fold everything together until the flour is almost completely combined.
Step 8 - Add Poppy Seeds
Before the flour has been completely folded in, dump in the 4 tablespoons of poppy seeds into the batter and continue folding in everything together until well combined. Step 9 - Fill the Muffin Liners and Bake Once everything is well combined, use an ice cream scooper to fill the muffin liners completely to have a muffin top and then pop the muffin into the oven to bake for about 17-25 minutes or until baked through. Step 10 - Resting and Making the Glaze
Once the muffins are baked, place them on a cooling rack to cool completely.
Then, start your glaze! Place 4 tablespoon of powdered sugar into a small bowl and add some of the lemon juice from the two zested lemons until a glaze is smooth, but thick.
Step 11 - Glaze the Muffins
Using a spoon, spoon you lemon glaze over top the muffin, and let them rest for 10 minutes so the glaze can harden.
