Soft Peanut Butter Cookies

I absolutely love peanut butter.

I honestly could eat spoonfuls of peanut butter all day long.

Makes about 32 large cookies

Takes about 30 - 45 minutes

Prep:

Preheat the oven to 350 degrees F (175 degrees C) and place a piece of parchment paper on a large baking sheet.


Ingredients:

1 1/2 cup all purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter - room temperature

2/3 cup granulated sugar

2/3 cup brown sugar

6 large (or heaping) tablespoons of creamy peanut butter

1 egg

1 1/2 teaspoons vanilla extract


Instructions:

- Step 1 - Mix Dry Ingredients

In a small bowl, mix together 1 1/2 cups of all purpose flour, 1/4 teaspoon salt, and 1/2 teaspoon of baking soda.

- Step 2 - Cream Together and Butter and Sugar

In a large mixing bowl, add the 1/2 cup of unsalted butter and cream - about 2-3 minutes.

Add the 2/3 cup of granulated sugar and 2/3 cup of brown sugar. Mix until well combined - about 3-4 minutes.

- Step 3 - Add Peanut Butter

Add the 6 (heaping when you want more peanut butter flavor) tablespoon into the butter and sugar mixer and blend until just combined.

- Step 4 - Add Egg and Vanilla Extract

Add the 1 egg and the 1 1/2 teaspoons vanilla extract to the butter and sugar mixture and blend until just combined.

- Step 5 - Combine the Wet and Dry Ingredients

Add half the dry ingredients to the wet ingredients and blend until the flour starts to incorporate, then add the remaining dry ingredients and mix for another minute.

The dry ingredients will not be completely incorporated, so you need to take a spatula and continue mixing until the dry ingredients are completely absorbed.

- Step 6 - Make Cookie Balls and Bake!

When you desire large cookies, make cookie balls that are about 2 tablespoons big and place then two inches apart on the baking sheet. Using a fork, press a crisscross pattern on top of the cookies pressing down about halfway - these will be baked for about 12-15 minutes.

When baking smaller cookies, make them about 1 tablespoons big and repeat the steps for the large cookies; place them two inches apart and using a fork, press a crisscross pattern on the top about half way down - these cookies will bake for 8-10 minutes.

*To check the done-ness of the cookies, check the bottom to see if they are golden brown and the tops should be slightly darker in color as well.*

- Step 7 - Take Pictures

You don't have to post these beauties on Instagram or Facebook, but the picture is proof that you made cookies because you will most likely eat them all!
