Fresh and Delicious Peach Pie

I absolutely love myself some peach pie. I am not sure what is it, but whenever I smell peach pie I think of happiness and yellow. What about you?

Makes: 1 Pie

Prep: Prepare the Pie Dough, which will take about an 15 minutes to make and then about 30 minutes in the fridge.


Ingredients:

8-9 (1000g) Fresh Peaches

1 1/2 -2 tablespoons fresh lemon juice

1/2 cup (100 grams) course sugar (or granulated sugar)

small pinch of salt

1/4 cup (35 grams) all-purpose flour

1 1/2 (17 grams) tablespoon unsalted butter cubed

1 egg

1 tablespoon milk

1 tablespoon course sugar


Instructions:

Step 1 - Make Pie Dough

If you have not made the pie dough already, make it now! Step 2 - Prepare the Peaches

While the pie dough is resting, start on the peaches. Wash and pit the peaches and then cut them into 6 pieces.

Place the cut peaches into a large bowl and then add the 1 1/2 tablespoons lemon juice, 1/2 cup course sugar and a small pinch of salt and mix until combined. Place the peaches to the side for about 20-30 minutes.

Step 3 - Bake Crust Preheat the oven to 350 degrees F (172 degrees C) and while the oven is preheating, grab one disk of dough and roll it out. Place it into the bottom of the pie dish, pressing if down, so that it meets all the sides. Decorate edge, place a piece or parchment paper in the middle of the pie and then fill with baking beans.

Pop the pie into the oven to bake for 10 minutes, remove from the oven, remove the baking beans and bake for another 10 minutes and remove from the oven.

Turn the oven up to 375 degrees F (190 degrees C).

Step 4 - Make the Decoration for the Top of the Pie

Before adding the filling to the pie crust, created the decoration for the top of your pie with the second disk and as you finish your pie, place the decoration in the fridge.

Step 5 - Prepare the Pie Filling

Mix in the 1/4 cup of flour into the peaches, which will suck up some of the liquid, but not all of it. Step 6 - Fill the Pie

Dump the pie filling into the pre-baked pie shell.

Add the couple pieces of butter on top and then add your topping you made with the crust. Step 7 - Egg Wash and Sugar

Before popping the pie into the oven, in a small bowl whisk together the 1 tablespoon of milk and the 1 egg and then brush the egg wash over top the the pie crust.

Then sprinkle the 1 tablespoon of course sugar over top the pie crust.

Step 8 - Bake

Once ready, toss the pie in the preheated oven and bake for about 30 minutes and then turn the oven down to 350 degrees F (375 degrees C) and then bake the pie for another 30-45 minutes until the liquid starts to bubble. If the crust is browning too much, place a piece of tinfoil over the top to keep it from browning more.

Step 9 - Rest

Once baked, let the pie rest until completely cool and then cut yourself a slice!
