Simple, Delicious, Rhubarb Cobbler

I know rhubarb is not always in season, but I had saw fresh Rhubarb in the grocery store and thought; yes, I need some Spring happiness in my life right now.

So, her we are, Simple, Delicious, Rhubarb Cobbler.

Because why not?

Makes: 4 Large Self-serving Cobbler Dishes (or one small baking dish maybe (did not try yet))

Takes About: 1 hour

Difficulty: 1 out of 5 (a responsible kid could make them!)


Prep:

Preheat the oven to 350 degrees F (170 degrees C)


Ingredients:

Filling

2 Tablespoons Cognac (optional)

425 grams (preferably fresh) rhubarb

1/3 cup sugar (raw or granulated)

Crust

100 gram rolled oats

100 grams rolled all-purpose flour

3 tablespoons sugar (raw or granulated)

85 grams butter - cold and chopped into cubes

1 teaspoon salt

1 teaspoon vanilla extract


Instructions:

- Step 1 - Start the Filling

Chop the rhubarb into inch thick pieces.

Once chopped, in a large pot, add the 425 grams of rhubarb, 1/4 cup sugar, and the 2 tablespoons spoons of Cognac or 2 tablespoons water (you must add the Cognac or the water).

Place the pot on medium low heat and simmer for about 5-7 minutes or until the rhubarb is soft, but still keeps it shape.

After about 4 minutes, taste 1 piece and if it seems too bitter, add the remaining sugar.

Once the filling is finished, set it to the side until needed.

- Step 2 - Make the Crust

In a large bowl, add 100 grams of rolled oats, 100 grams of flour, 3 tablespoons of sugar, 85 grams of butter, 1 teaspoon of salt, and 1 teaspoon of vanilla extract.

Using a fork, a pastry blender (not the same thing as a normal blender), or your hands; mix everything together until it forms a crumbly dough and the butter seems well dispersed.

- Step 3 - Fill the Cobbler Containers

Once everything is prepared, spoon equal amounts of rhubarb filling into each of the cobbler dishes.

Spoon the crust over the top of the rhubarb until the rhubarb is completely encased. If you have a little extra crust, sprinkle it on top (I like a lot of crust).

- Step 4 - Bake!

Once the cobblers are ready, place them on a baking sheet (I recommend placing a piece of parchment paper under them for easier clean up) and bake for about 30-45 minutes (or until the crust is golden brown) and the cobbler smells fantastic.
