Mini Health Nutty Banana Muffins

So, I know normal Banana Nut Muffins are good and I was not sure if I could convince you to have healthy ones, but I'm going to be honest with you.
These muffins, they are not just pretty darn fantastic, they are Amazingly Fantastic!
Bake then and try them for yourself ;)

Prep:
Line a miniature muffin tin with miniature muffin wrappers and preheat the oven to 350 degrees F (177 degrees C).

Ingredients:
1/4 cup brown sugar
6 tablespoon unsalted butter - melted
2 overripe bananas
6 tablespoon unsalted butter - melted
1 large egg
1/2 teaspoon vanilla extract
3/4 cup whole wheat flour
1/4 cup coconut flour
1 teaspoon baking soda
1/4 teaspoon salt
1/3 - 1/2 cup walnuts - roughly chopped
Ingredients:
- Step 1 - Mix Butter and Sugar
Mix together the 1/4 cup of brown sugar and the 6 tablespoons of melted butter until all the sugar is wet.

- Step 2 - Mix in the Bananas
Mix the 2 bananas into the sugar and butter mixer. If there are chinks, that is okay.

- Step 3 - Add the Remaining Wet Ingredients
Add the 1 egg and 1/2 teaspoon of vanilla extract to the banana mixture until well combined. '

- Step 4 - Mix in all the dried Ingredients
Now, add the 3/4 cup of whole wheat flour, 1/4 cup of coconut flour, 1 teaspoon of baking soda, and 1/4 teaspoon of salt to the banana batter.

And mix until just combined!

- Step 5 - Add Walnuts
Chop or break the walnuts into small pieces and mix them into the banana batter using a spatula.
- Step 6 - Spoon Batter into Mini Muffin Pan
Using two spoons or a small ice cream scoop, fill the muffin liners about 3/4 of the way.

- Step 7 - Bake!
Bake the cupcakes for about 8-10 minutes. Check on them often because they can over bake quickly because they are so small.

- Step 8 - Enjoy!
Thankfully your can eat a few of these because they are made with some healthy ingredients and are so Small!
