Today, we will be baking Streuselkuchen (also known as Crumble Cake), a German classic cake that is eaten with hot chocolate (for the kids) and coffee and tea (for the adults) in the middle of the afternoon, also known as Kaffee and Kuchen time. One of my favorite times of the day!

Makes: 1 large cake

Takes: 1.5 hours

Difficulty: 1 out of 5 (perfect for kids)

Prep:

Butter a large cake dish (13 inch by 9 inches) and preheat the oven to 350 degrees F (174 degrees C).

Ingredients:

Filling:

3/4 cup (160 grams) packed brown sugar

3/4 cup (100) all-purpose flour

2 teaspoons ground cinnamon

Crumb Topping:

6 tablespoons (84 grams) melted unsalted butter

1 cup (220 grams) packed brown sugar

1 1/2 tablespoon ground cinnamon

1 cup (150 grams) all-purpose flour

Cake:

3 2/3 cup (600 grams) all-purpose flour

3 teaspoons baking powder

1 cup (113 grams) room temperature unsalted butter

1/2 cup (113 grams) granulated sugar

1/3 cup (80 grams) packed brown sugar

3/4 cup (225 grams) greek yogurt

3/4 tablespoon vanilla extract

1 teaspoon salt

1 1/4 cup (290 grams) milk

3 eggs

Glaze:

1/2 -1 cup powdered sugar

2-3 tablespoons milk

Instructions:

Step 1 - Make the Filling

In a small bowl, mix together 3/4 cup of packed brown sugar, 3/4 cup of all-purpose flour, and 2 teaspoons of ground cinnamon and then set it aside until needed.

Step 2 - Mix Together the Crumble Top

In another bowl, mix together the 6 tablespoons of melted unsalted butter, 1 cup of packed brown sugar, 1 1/2 tablespoon of ground cinnamon, and 1 cup of all-purpose flour until all the dried ingredients are absorbed and then set off to the side until needed.

Step 3 - Start the Cake In a large bowl add the 3 2/3 cups of flour and the 3 teaspoons of baking powder and set aside. Step 4 - Butter and Sugar

Grab another large bowl and mix the 1 cup of unsalted butter until fluffy - about 2-3 minutes and then add the 1/2 cup granulated sugar and the 1/3 cup brown sugar and mix for another 2-3 minutes until fluffy.

Step 5 - Add the Remaining Pieces

To the butter and sugar, add the 3/4 cup of greek yogurt, 3/4 tablespoon of vanilla extract, 1 teaspoon of salt, 1 1/4 cup of milk, and 3 eggs and mix until everything is incorporated.

Step 6 - Mix Dry and Wet Ingredients

Dump the flour into the wet ingredients and fold together until combined.

Step 7 - Assembly

Using an ice cream scoop, spoon half of your batter into the prepared baking dish. Then, sprinkle your filling over the cake in the baking dish making sure you cover the whole cake.

Then, spoon the remaining cake batter over top of the filling and spread it out evenly. Once the filling is completely covered, spoon the crumble over top the cake until it is evenly dispersed. If you need more guidance, you can watch the video above at 9 minutes.

Step 8 - Bake! Once everything has been added into the cake dish, pop the cake in the preheated oven for about 40-50 minutes of until baked through.

Step 9 - Glaze

Once the cake is baked, let it cool completely before adding the glaze.

Once the cake is cooled, in a small bowl, mix together the 1/2 -1 cup of powdered sugar and 2-3 tablespoons of milk.

If the glaze is too thin, add more powdered sugar and if it is too thick, add more milk. Once the mixture is smooth, spoon it over top the cake and let the glaze harden.

Step 10 - Enjoy!

After about 10 minutes, Enjoy!
