Easy Brownie Bites

These Easy Brownie Bites and so easy to make and perfect for kids. In this Melissa's Baking Camp episode, we walk through an easy recipe of two bite brownie bites that taste delicious and delightful.

Makes: About 32 Mini Brownies

Takes About: 45 minutes

Difficulty: 1 out of 5 (perfect for kids!)



Prep: Preheat the oven to 325 degrees F (162 degrees C) and find the mini muffin tin (normal muffin tin works as well).


Ingredients:

1/2 cup plus 3 tablespoons (140 grams) unsalted butter - melted

1/2 cup (100 grams) granulated sugar

1/2 cup plus 3 tablespoons (70 grams) unsweetened cocoa powder

2 eggs

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup (72 grams) all-purpose flour

Optional: Nuts and/or Chocolate Chips


Instructions:

Step 1 - Butter the Muffin Tin

If you have no yet, melt the 1/2 cup plus 3 tablespoons of butter and using a pastry brush, brush the inside of the muffin tin with the melted butter using a pastry brush. Once the muffin tin is buttered, place it to the side until needed. Step 2 - Start the Brownie Mixture

In a large bowl, add the remaining butter into a large bowl and add the 1/2 cup of granulated sugar and 1/2 cup plus 3 tablespoons unsweetened cocoa powder and mix until well combined and no powder is visible.

Step 3 - Add the Eggs Add the eggs, one at a time, to the chocolate and butter mixture, making sure each egg is well combined before adding the next egg. Step 4 - Add Remaining Ingredients

Once the eggs are well combined, add the 1/2 teaspoon vanilla extract, 1/4 teaspoon salt, and 1/2 cup all-purpose flour to the butter and chocolate mixture and fold everything together until there is no flour visible.

Step 5 - Fill the Muffin Tin

When everything is well combined, use two spoons to place about 1 tablespoons worth of brownie mixture into each muffin cavity (about half full) until all the batter has been used. Step 6 - Bake! Pop the brownies into the preheated oven and back for about 8-12 minutes or until a toothpick comes out clean when you poke the biggest one.

Step 7 - Enjoy! Once baked, let the brownies cool in the muffin tin and then transfer them to a cooling rack to cool completely. Then, enjoy!
