Flourless Chocolate Cake with Prunes

I know, I know, you are thinking, why would you add prunes to your chocolate cake.

Well, I'll tell you why, because I said you should.

You should because, oh my, it is truly delicious and it adds such a great texture as well. Also, you can say it is healthy because it has fruit!

Makes: 2 large (7 ounce) Ramekins

Takes: 1.5 hours

Difficulty: 1 out of 5



Prep:

Preheat the oven to 320 degrees F (160 degrees C) and then butter the two ramekins and dust with cocoa powder. Set the ramekins aside until needed.


Ingredients:

Cake

80 grams dark chocolate - chopped

20 grams unsalted butter

2 eggs

a pinch of salt

20 grams granulated sugar

70 grams prunes (about 8) - roughly chopped

1/4 teaspoon vanilla paste

1 tablespoons cocoa powder

Topping

2-4 plums (or your choice or berry or fruit) - chopped

2 tablespoons sugar


Instructions:

Step 1 - Melt Together Butter and Chocolate

In a double boiler (or a glass bowl over a water bath) place 80 grams of chopped dark chocolate and the 20 grams of unsalted butter. Place the two over the water bath on low heat and mix periodically until it is almost melted.

Once it is almost melted, pull the chocolate off the heat.

Continue to mixing until completely melted.

Set aside until needed.

Step 2 - Whip the Egg Whites

Using a large bowl and a small bowl, separate the egg white and the egg yolk and place the egg yolk aside.

(I have 4 yolks because both of my eggs had a double yolk!)

Using a hand mixer, whip the egg whites until foamy.

Once foamy, add a small pinch of salt and then start adding the 20 grams of sugar slowly, about 1 teaspoon at a time, until gone.

Continue to mix the egg whites until they reach stiff peaks.

Set aside until needed.

Step 3 - Spice up the Chocolate Mix

Check to see if the chocolate is hot to the touch, if not, add the egg yolks and mix until completely combined.

At this time, add the 70 grams of chopped prunes, 1/4 teaspoon of vanilla paste, and the 1 tablespoon of cocoa powder and mix until combined.

Step 4 - Fold Together Chocolate and Egg Whites

Carefully spoon the chocolate mixture into the bowl with the egg whites.

Slowly fold the two together with a spatula.

And continue to fold until the mixture is blended together and there are no white streaks left.

Step 5 - Fill the Ramekins and Bake!

Once the mixture is ready, using a large spoon (or my choice, an ice cream scoop) scoop the batter into the prepared ramekins.

They will look pretty full, but don't stress, they only rise a little.

Go ahead and giggle the ramekins a little to help them sit flat and then place them in the oven for about 40 minutes or until a toothpick comes out clean.

Step 6 - Prepare the Topping

Cut the plums into small pieces and place them in a small bowl. Spoon 2 tablespoons of sugar over the top and mix until all the plums are covered in sugar.

Set aside until needed.

Step 6 - Rest and Serve

Once the cakes are baked, let them cool for about 15 minutes and and then serve them with your topping.
