Easy S'more Cookies

With summer coming into full swing and the kids staying home, I decided to put together some recipes perfect for kids. These ones are prefect because they are what every kid thinks of when the go to camping. They are also an easy bake, does not take a lot of time, and kids can do most of the work.
They are also chocolaty, filled with gooey marshmallowy, with crushed graham crackers inside. What more could we need from a S'more Cookie? They are honestly one of the easiest cookies I have baked and also one of the tastiest oven baked s'more cookies I have ever had.

But, let's get started, I know who have been drooling over these cookies already.

Makes About: 20 Large Cookies
Takes About: 30 minutes

Prep:
Place a piece of parchment paper on a baking sheet and preheat the oven to 375 degrees f (190 degrees C).
Ingredients:
5 ounce (140 grams) graham crackers - smashed
1 3/4 cup (245 grams) all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
3/4 cup (170 grams) unsalted butter - room temperature
1/2 cup (113 grams) packed dark brown sugar - (or mix 1/2 cup granulated sugar with 1 teaspoon molasses)
1/4 cup (50 grams) granulated sugar
1 teaspoon pure vanilla extract
2 large eggs
2 cups (12 ounces) milk chocolate or dark chocolate (chocolate chips or roughly chopped chocolate)
1 -2 cups mini marshmallows (not flavored)
Instructions:
Step 1 - Mash the Graham Crackers
In a large bowl, place the 5 ounces of crackers and smash them with your hands, a heavy kitchen tool, or a potato masher until the crackers are a fine powder.
Step 2 - Combine Dry Ingredients
Once the crackers have been well mashed, add the 1 3/4 cups of all-purpose flour, 1 of teaspoon salt, and 1 teaspoon of baking soda and mix until everything is combined.
Once complete, set aside until needed.
Step 3 - Mash the Butter
In a separate large bowl, add the 3/4 cup unsalted butter and using spatula, mash the butter until it is really smooth and soft - about 3-5 minutes.
Step 4 - Add the Sugars
When the butter is super soft, add the 1/2 cup brown sugar and also the 1/4 cup granulated sugar. Using the spatula, mash the butter and the sugars together until very smooth - about 3-5 minutes.
Step 5 - Add Vanilla and Eggs
Once the sugars and butter have become smooth, add the 1 teaspoon vanilla extract and the two eggs directly into the bowl.
Continue to mix these ingredients into the bowl until it has reached one consistency.
Step 6 - Combine the Dry Ingredients and the Wet Ingredients
Now, go ahead and dump your dry ingredients into the wet ingredients.
Using the spatula, fold everything together until all your dry ingredients have been well mixed in and you don't have any streaks of flour.
Step 7 - Add the Chocolate and Marshmallows
When you are ready, add the chocolate pieces and also the marshmallows and using that spatula, continue to mix until the chocolate and marshmallows are well dispersed.
With the marshmallows, add as many as you like, but I kept a few off to the side, so I can add them on top of the cookies before I popped them in the oven.
Step 8 - Prepare to Bake!
Using two large soup spoons, spoon the batter up and place them onto the prepared baking sheet about 2 inches (5 cm) apart, using the second spoon to help get the batter off the first spoon.
Repeat this step until our cookie sheet is full.
If you kept some marshmallows, pop just a few on top of each cookie at this time. Step 9 - Bake! Pop the cookies into the preheated oven for about 10-12 minutes or until golden brown.
Once the cookies are bakes, grab them out of the oven and let them cool for at least 2 minutes on a baking sheet. Once cooled slightly, transfer them to a cooling rack to cool completely.
Step 10 - Repeat!
Now, repeat step 8 and 9 until you have used up all of your cookie batter. Step 11 - Share and Enjoy! That is it! You have successfully made S'more Cookies! I hope you enjoy and I can't wait to see you for our next recipe!
