Easy Coconut Granola

Have you ever stood in the granola section at the store and thought, wow...this is expensive.

I have.

And then I buy it anyways because I'm q bit lazy.

However, the other day I needed something easy to bake and guess what, granola is pretty easy to make, not surprisingly, not as expensive as buying it pre-made...what?!

Long store short, I hope you try this recipe out because it is honestly way cheaper than buying it.

Don't be lazy like me and make pretty yogurt bowls like this!

Makes: about 3 cups of granola

Takes About: 1 hour

Difficulty: none...


Prep:

Preheat the oven to 320 degrees F (160 degrees C) and line a large baking sheet with parchment paper.


Ingredients:

1/2 cup coconut oil

1/3 cup natural honey

1/2 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

A small pinch of nutmeg (optional)

1/2 teaspoon salt

2 cups old-fashioned oats

3/4 cup bleached, sliced almonds

1 tablespoon chia seeds

1/4 cup freshly roasted coconut flakes


Instructions:

- Step 1 - Heat the Wet Ingredients

In a small sauce pan, on low heat, warm the 1/2 cup coconut oil, 1/3 cup honey, and 1/2 teaspoon vanilla extract until the coconut oil has melted.

- Step 2 - Mix Most of the Ingredients, but not All

In a large bowl, using a spatula, mix together the warmed coconut oil, honey, and vanilla extract with the 1/2 teaspoon of ground cinnamon l, the small pinch of nutmeg, 1/2 teaspoon of salt, 2 cups of old-fashioned oats, 3/4 cup of sliced almonds, and 1 tablespoon of chia seeds.

- Step 3 - Bake

Spoon the mixture onto the prepared baking pan and bake for about 20 minutes, stirring halfway through.

- Step 4 - Add Coconut Flakes

Sprinkle the 1/4 cup coconut flakes over the granola and bake for another 5 minutes or until the coconut flakes have roasted slightly.

- Step 5 - Cool, Store, and Enjoy

Once the granola is baked, let it cool completely.

Once cooled, break the granola up into the desired sized pieces and store in an airtight container.
