Easy Chocolate and Banana Muffins

If you need a reason to eat chocolate for breakfast, I'm giving you a reason here!

Not on a sliver platter, but this is online and there are sliver computers out there, so it is kind of like a silver platter, right?

How about you just pretend and just make these because they are pretty amazing and delicious and can be healthy! (With a smidge of extra chocolate).

Makes About: 16-18 Muffins

Takes About: 1 hour and 30 minutes

Difficulty: 1 out of 5 (responsible children could do it!)


Prep:

Preheat the oven to 350 degrees F (170 degrees C) and line a muffin tin with paper liners.

You can use a hand whisk for the entire recipe.


Ingredients:

1 3/4 cup all-purpose flour (or try using Vegi X Flour with Beet Powder - healthy and tasty)

1 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsweetened cocoa powder

2 ripe bananas

1/2 cup raw sugar (or granulated sugar)

2 eggs

1 teaspoon vanilla extract

1/2 cup canola oil or vegetable oil

1/8 cup milk

1/2 cup - 1 cup chocolate chips (or chocolate chunks)


Instructions:

- Step 1 - Combine all the Dry Ingredients

In a medium sized bowl, mix together the 1 3/4 cup of flour, 1 teaspoon of baking powder, 1/4 teaspoon of baking soda, 1/2 teaspoon of salt, and 1/2 cup of unsweetened cocoa powder until well combined.

- Step 2 - Smash the Bananas with Sugar

In a large bowl, smash 2 bananas and 1/2 cup of raw sugar until soft.

Until they look like this:

- Step 3 - Add Eggs

Add the first egg, mixing completely.

Add the second egg, mixing completely once again.

- Step 4 - Mix in Remaining Wet Ingredients

To the banana mash, mix in the 1 teaspoon of vanilla extract, 1/2 cup of canola oil, and 1/8 cup of milk.

- Step 5 - Add in the Dry Ingredients

In 3 batches, add the dried ingredients with a spatula to the banana mash until all the dried ingredients are combined.

- Step 6 - Add in Chocolate

Chop up 1/2-1 cup of chocolate (depends on how chocolaty you want the recipe).

And mix them in until they are well dispersed through your batter.

- Step 7 - Fill Muffin tin and Bake!

Fill the muffin papers about 2/3 of the way full.

Then bake for about 12-15 minutes until baked through and a toothpick comes out clean when you poke the muffin.
