Have you ever had that problem where you buy a bunch of bananas, you eat all of them but 1 and that 1 you don't eat gets so ripe that you no longer can eat it?

Now, you have this 1 banana, but it is not enough to make banana bread or muffins, so now you are stuck with 1 banana. 1 lonely banana.

I have been in this situation multiple times.

But, I have come up with a solution!

The answer, Banana Ice!

Makes: 2-3 cups of Banana Ice Cream

Takes: 5-10 minutes and 1-2 hours to freeze (not including the time to collect the bananas and make them super ripe)

Difficulty: 1 out of 5

Prep:

You will need about 4 very ripe bananas. What I do, is every time I have 1 or more banana that has gotten overly ripe, I toss is in the freezer until I have about 4 bananas. If you magically have 4 bananas that are overly ripe, at least 2 of them (or all of them) need to be in the freezer for at least 2 days to get soft and gooey.

The soft and gooey ones are important.

Once you have at least 2 overly ripe bananas that have been frozen and 2 overly ripe bananas just hanging out, you can start your banana ice cream!

Ingredients:

4 overly ripe bananas - at least 2 frozen through (or all of them)

Optional: ice cream cones

Instructions:

- Step 1 - Prep Your Food Processor

You will need a food processor, blender, or something else to to blend the bananas to a smooth consistency.

- Step 2 - Peel and Blend the Bananas

I started with 2 bananas, 1 that was in the freezer and 1 that was overly ripe, but just because my food processor is not the best.

I dropped the two bananas in my mixer and blended until smooth.

Add the two other bananas into the mixer and mix until smooth.

- Step 3 - Freeze!

Once the bananas are well blended, using a spoon, mix it slightly and then place in the freezer covered until completely frozen through.

This can take 4+ hours.

- Step 4 - Thaw Slightly and Enjoy!

Once your banana ice has frozen thought, it is ready to enjoy.

However, I recommend letting it sit out on the counter to thaw for a few minutes before enjoying.
