Coconut Flour Lava Cake

Prep:
Butter 4 3-ounce ramekins or 2 6-ounce ramekins very well and dust with cocoa powder.

Preheat the oven to 425 degrees F (or 218 degrees C).
Ingredients:
4 ounces bittersweet chocolate (60-70%)
4 tablespoons unsalted butter
1 egg
1 egg yolk - the egg white will not be used
1/4 cup granulated sugar
a large pinch of salt
2 tablespoons coconut flour (substitutions are: gluten free flour or almond flour)

Instructions:
- Step 1 - Melt the Chocolate and Butter Together
In a double-boiler (or a pan with a glass bowl above it) add the 4 ounces of chocolate and the 4 tablespoons of unsalted butter and melt on low heat.

If you can't use a double-boiler, you can melt the chocolate and butter in the microwave, but only 10 seconds at a time. Place it in the microwave for 10 seconds, mix, place it back in the microwave for 10 seconds, and then repeat until the chocolate is melted.
Do this very slow because the chocolate can burn easily in the microwave.
- Step 3 - Whip the Eggs
As the chocolate and butter melts, in a medium size bowl, add the 1 egg and the 1 egg yolk, the 1/4 cup of sugar and the large pinch of salt.

Using a hand mixer or a large whisk, whisk the egg until they are light and fluffy.

- Step 3 - Finish Melting the Chocolate
Once the chocolate has mostly melted, take it off the heat and mix until the chocolate is completely melted.
With Chocolate Chunks:

After all the Chocolate has Melted:

Mix until shiny and smooth and cooled.
If the chocolate is not cooled down, it will cook the eggs - make sure it is about room temperature.
- Step 4 - Add Chocolate to Egg Batter
Add half of the chocolate to the egg batter.

Mix until completely combined.

Add the second half of the chocolate to the egg batter and mix until smooth.

- Step 5 - Add the Flour
Add the 2 tablespoons of coconut flour into the chocolate and mix until just combined.
Do not over mix.

- Step 6 - Fill the Ramekins
Fill the ramekins equally, but leave out about 4 tablespoons of batter if you want it filled with peanut butter or nutella.

If you do not want them filled, add all the batter to the ramekins and place them in the oven and skip to steps 9 and 10.
- Step 7 - Fill the Ramekins
Spoon 1/2 to 1 tablespoon of peanut butter or nutella into the middle of the ramekins.

Using a spoon, press it down slightly.
- Step 8 - Cover the Filling
Spoon the remaining batter over the filling.
- Step 9 - Bake!
Place the ramekins into the oven for 7-10 minutes or until the middle is slightly jiggly.
- Step 10 - Enjoy
Once the lave cakes are baked, pull them out of the oven, and let them rest for about 1 minute.
After the minute, turn the lava cakes out onto a plate and enjoy!
