Chocolate Covered Raisin Cookies

You thought oatmeal raisin cookies were good, then you have never had these cookies before.

Makes: 18 - 24 cookies
Takes: 1 hours (with baking)
Difficulty: Easy Peasy
Prep:
Preheat the oven to 350 degrees F (172 degrees C) and place a piece or parchment paper on a large baking sheet.
Ingredients:
1/2 cup unsalted butter - room temperature
1/2 cup brown sugar
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 1/4 cup rolled oats
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
200 grams chocolate covered raisins
Instructions
- Step 1 - Cream the Butter
In a large bowl, cream the 1/2 cup of butter.

- Step 2 - Cream in the Sugar
Add the 1/2 cup of brown sugar to the butter and mix until fluffy.

- Step 3 - Add the Wet Ingredients
Add the 1 egg and the 1 teaspoon of vanilla extract to the butter and sugar mixture and mix until just combined.

- Step 4 - Add Most of the Dried Ingredients
Add the 1 cup of all-purpose flour, 1/2 teaspoon of salt, 1/2 teaspoon of baking soda, and 1/2 teaspoon of ground cinnamon to the batter.

And mix until just combined.
Do not over mix.

- Step 5 - Add the Oats
Add the 1 1/4 cup of oats to the batter and mix using a spatula.

- Step 6 - Add the Chocolate Covered Raisins
Add the 200 grams of chocolate covered raisins and mix without using a mixer.
I recommend mixing it with your hands - it is a lot easier.

- Step 7 - Scoop and Bake
Roll pieces of dough into a ball that is about the size of 1 tablespoon and place the dough balls about 2 inches apart on the prepared baking sheet.

Bake the cookies for about 10-15 minutes until they are golden brown.

- Step 8 - Cool and Chew
Now for the easy part, enjoy these delicious little dreamy treats!
