Boozy Cobblers

So, sometimes as adults we don't get the chance to indulge in tasty desserts.

Well I have made this one specifically for us adults.

Makes: 3-4 cobblers

Takes About: 45 minutes

Difficulty: Easiest Thing There is


Perp:

Preheat the oven to 350 degrees F (176 degrees C) gather 4 large ramekins.


Instructions:

- Topping

1 1/4 cups flour

2 tablespoons almond flour

1/2 cup sugar

1 1/2 teaspoon baking powder

1 teaspoon salt

6 1/2 tablespoons cold unsalted butter - cubed

2 tablespoons milk

1/4 teaspoon almond extract - Filling

7 fresh apricots

1 fresh peach

3/4 cup - 1 cup mixed berries

(If your don't have 7 apricots, 1 peach, and 1 cup of mixed berries; you can use any type of fruit and berries you would like. You can even make us a full blackberry cobbler if you like. I would just highly recommend you mix fruit that goes together)

4 tablespoons Bourbon - I used Brown Sugar Bourbon

1 teaspoon cinnamon

2 teaspoons granulated sugar

1/8 cup flour


Instructions:

- Step 1 - Make the Cake Topping

In a large bowl, mix together 1 1/4 cups of flour, 2 tablespoons of almond flour, 1/2 cup of sugar, 1 1/2 teaspoon of baking powder, 1 teaspoon of salt, 6 1/2 tablespoons of cubed butter, 2 tablespoons of milk, and 1/4 teaspoon of almond extract.

And mix until it all comes together.

The dough will be extremely sticky.

Set aside until needed.

- Step 2 - Chop and Mix the Fruit

In another large bowl, chop and mix together the 7 fresh apricots, 1 fresh peach, and

3/4 cup - 1 cup of mixed berries.

Or the mixture of fruits you have decided.

Make sure everything is about the same size.

- Step 3 - Add the Spices to the Fruit

Add 4 tablespoons of Bourbon, 1 teaspoon of cinnamon, 2 teaspoons of granulated sugar, and 1/8 cup of flour to the assorted fruits.

I used a sweet Bourbon, which is what I recommend.

And mix!

- Step 4 - Add Fruit to Ramekins

Spoon the fruit into the ramekins, filling each of them equally; about 2/3 full.

- Step 5 - Add the Cake Mixture

Spoon the cake mixture over the top of the fruit. Leave some space around the edges to let the cobbler breath while it bakes.

- Step 6 - Bake!

Bake the cobblers for in the preheated oven for about 25 minutes of until the tops have browned and are baked through.

Once baked, enjoy! These are lovely warm and cold.

Serve with ice cream and then you will be living the life!
