Blackberry Ice Cream with Condensed Milk

Most of us get the craving for ice cream once it gets too hot to move, but sometimes we can't find the flavor we are searching for. For me, that is blackberry ice cream. I don't often find it here in Germany.
However, the fact that I can make my own ice cream, makes me even happier than buying it. There is a type of joy that you reach when you get to take a bite of your frozen home made treat on a hot hot day.

Makes: About 6 Cups (or about 1kg)
Takes About: 1 hour (freeze time = 6 hours)

No prep for this one! Just follow the instructions below! Ingredients:
4 cups (24 ounces) fresh blackberries
1 teaspoon fresh lemon juice
2 teaspoons - 1/4 cup of granulated sugar depending on the sweetness of your berries.
2 cups heavy whipping cream
1 can (14 ounces or 300 grams) sweetened condensed milk
2 teaspoons pure vanilla extract
Instructions:
Step 1 - Puree the Blackberries
Gather and wash the 4 cups of blackberries.

Using a food processor or blender, puree the blackberries until they are smooth

If you prefer to have seedless ice cream, strain the blackberry puree through a sifter until smooth.
Step 2 - Boil the Blackberry Puree
Transfer the blackberries to a pot and add the 1 teaspoon of lemon juice.
Taste the puree to see how much sugar you would like to add and add as much as you feel is right. Be careful because the condensed milk will also add most of the sweetness, so you don't want the puree to be too sweet.

Bring the puree to a simmer, stirring constantly, and let it simmer for about 5 minutes or until it starts to thicken.
Pull off the heat and let cool completely.

Step 3 - Whip the Whipping Cream
In a large bowl, whisk the 2 cups of whipping cream until it reaches soft peaks.

My cream is not messy right now because I always have to whip my cream in a tall bowl or I spray cream everywhere, and then I transfer it to my glass bowls.
Step 4 - Add the Condensed Milk
Spoon the 300 grams of condensed milk into the whipped whipping cream.

And mix until completely incorporated.

Step 5 - Fold in the Blackberry Puree
Make sure the blackberry puree is completely cooled before adding it to the cream mixture.
Split the cream mixture in half.
In one half of the cream, fold in the blackberry puree until completely combined.

Step 6- Combine the Two Creams
Pour the blackberry cream into the remaining original cream.

Using a spatula, mix the two together, but not too much, because you want to keep the swirl of the two colors throughout the completed ice cream.

Step 7 - Freeze Your Cream!
Once your cream is well mixed, transfer it to a large container (or two medium ones) with an airtight lid.

Then place the cream in the freezer for at least 6 hours or until frozen.
Step 8 - Enjoy!
Once the ice cream is sufficiently frozen, enjoy!
