Blueberry Fiber Muffins

We should be able to eat muffins at 6am or 6pm without judgement!

They are perfect for anytime of the day. Especially if you need some fiber...

It is like having a bowl of cereal with a few blueberries added in.

Yum!


Makes About: 12-16 Muffins

Takes About 1 hour

Difficulty: 1 out of 5

Prep:

Preheat the oven to 400 degrees F and line a muffin tin with papers or crease them well.

Ingredients:

1 1/4 cup fiber cereal

1 1/3 cup whole milk

1/2 cup fresh blueberries

1/2 teaspoon vanilla extract

1/4 cups canola oil

1 egg

1 1/4 cup flour

1/2 cup packed brown sugar

3 teaspoons baking powder

1/4 teaspoon slat

1 teaspoon cinnamon

Instructions:

- Step 1 - Crush that Cereal!

Crush the 1 1/4 cup of cereal into smaller chucks.


It should not be a powder, just smaller pieces.


It looks like rabbit food, but I promise it is just fiber cereal...

- Step 2 - Soak the Cereal

In a large bowl, add the crushed cereal, 1 1/3 cup of milk, and the 1/2 cup of blueberries.

Set aside for 5-10 minutes; the cereal will become softer.


- Step 3 - Add Other Wet Ingredients

Add the 1 egg, the 1/2 teaspoon of vanilla extract, and 1/2 cup canola oil and mix well.

Try to keep the blueberries whole.



- Step 4 - Grab Your Secondary Bowl

In a separate bowl, mix together the 1 1/4 cup of flour, 1/2 cup of packed brown sugar, 1 teaspoon of cinnamon, and 3 teaspoon of baking powder and blend.



- Step 5 - Combine the Wet and Dry Ingredients

Using a spatula or wooden spoon, add the dry ingredients into the wet ingredients in two batches.


After the first batch, the batter will start to stiffen.


Add the second batch and mix until all the dry ingredients have been incorporated into the batter.

The batter will feel very thick, and that is a good thing.


- Step 6 - Fill the Muffin Tins

Spoon the batter into each muffin liner until they are about 3/4 full.


- Step 7 - Bake

Bake the muffins for 20-25 minutes, or until they are baked through; a toothpick should come out clean.



- Step 7 - Enjoy!

These muffins are delicious and so very healthy! Eat 4 or more, but be careful, they are full of fiber.
