Blueberry Scones

Are you looking for something to eat for Saturday morning? Or something to take to your book club on Thursday? Or even shove into your kids mouths as they run to the bus? Look no further! These scones are so yummy and so pretty.


Makes: 12-16 Scones

Takes About: 1 Hour

Difficulty: 2 out of 5

Prep:

Place a piece of parchment paper on a cookie sheet and set aside.

Preheat the oven to 400 degrees F.

Ingredients:

2 cups flour

1/2 cup granulated sugar

1 tablespoon baking powder

3/4 teaspoon salt

1/2 cup unsalted butter - very cold and cubed

1 egg

1/2 cup heavy whipping cream

2 tablespoons orange juice

1 cup fresh blueberries

1/3 cup flour for dusting

3 tablespoons heavy whipping cream for brushing

pearl sugar for toppings

Instructions:

- Step 1 - Make Sand

In a large bowl, mix together the 2 cups of flour, 1/2 cup of sugar, 1 tablespoon of baking powder, and 3/4 teaspoons of salt.

Add the 1/2 cup of cubed butter to the dried ingredients.


Using your hands, press the butter and flour together until the mixture looks like sand.


- Step 2 - Add the Egg

Using an electric mixer, mix the 1 egg, the 2 tablespoons of orange juice, and the 1/2 cup of heavy whipping cream into the flour and butter mixture until the batter starts to come together. Do not over beat.



- Step 3 - Press the Dough Together

Using your hands, press the dough together until the mixture forms a solid ball.

The dough will be very sticky, do not add more flour.


- Step 4 - Add Blueberries

Add the 1 cup of blueberries to the dough and mix together carefully to keep the blueberries whole.



- Step 5 - Flour and Form

Flour the counter and place the dough ball in the middle.

Slowly flatten out the dough until it is about 2 inches thick and then form it into a rectangle, about 5 inches wide.


The dough ball can be split into two, so that two rectangles can be created instead of the one long one if you don't have a lot of counter space.


- Step 6 - Cut out Scones

Cut the log into squares, about 3-4 inches wide and then cut each square diagonally.

If your dough keeps sticking to the knife, put a little flour onto it.


- Step 7 - Prep for the Bake

Pull the triangles apart and place them onto the prepared baking sheet about 2 inches apart.


Using the 3 tablespoons of heavy whipping cream, brush the cream over the scones, making sure to just brush the tops.


Sprinkle the pearl sugar over the scones.


- Step 8 - Bake!

Bake the scones for 15-20 minutes until the bottoms are browned and the scones are baked through.

Once baked, enjoy these delicious treats. I do have to say, they are great with a fresh cup of coffee.
