Easy, Fudgy, Brownies

Yes, I know, fudgy is not a word, but these brownies are the definition of fudgy.
These brownie are rich, tasty, and mouth watering chocolate - all of the best things in a brownie.

Makes: One 8 inch by 12 inch pan worth of brownies (that counts as 1, right)
Takes About: 1 hour

Prep:
Butter or grease a 8 inch by 12 inch square baking dish and place a piece of parchment in the bottom leaving about an inch of parchment paper peaking over the edge of the pan.
Preheat the oven to 350 degrees F.
Ingredients:
1 cup unsalted butter - melted and cooled
2 tablespoons vegetable oil
1 1/4 cups granulated sugar
1 cup packed brown sugar
4 large eggs - room temperature
1 teaspoon pure vanilla extract
3/4 teaspoon salt
1 cup all-purpose flour
1 cup unsweetened cocoa powder
4 ounces white chocolate - chopped or chips
4 ounce bittersweet chocolate - chopped or chips
Or 8 ounces of your choose of chocolate - chopped or chips
Instructions:
- Step 1 - Start Mixing
In a large bowl, mix together the 1 cup of melted butter, 2 tablespoons of vegetable oil, 1 and 1/4 cup of granulated sugar, and 1 cup of brown sugar until fluffy and mixed well.


- Step 2 - Add Eggs and Vanilla
Add the 4 eggs and the 1 teaspoon of vanilla extract to the butter and sugar mixture and mix until lighter in color.


- Step 3 - Sift in Dry Ingredients
Sift the 3/4 teaspoon of salt, 1 cup of all-purpose flour, and 1 cup of cocoa powder directly into the wet ingredients.

Using a spatula, mix together the wet ingredients and the dry ingredients until completed combined.


- Step 5 - Add the Chocolate Chunks
Chop 4 ounces of white chocolate and 4 ounces of bittersweet chocolate into pieces (thin or thick, whichever you prefer) or use chocolate chips if desired.


Add 2/3 of the chopped chocolate into the brownie mixture and using the spatula, mix the chocolate in.

- Step 6 - Prep to Bake
Spoon the batter into the prepared pan.

- Step 7 - Decorate and Bake!
Sprinkle the remaining chocolate evenly over the brownie batter.

- Step 8 - Bake!
Place the brownies into the preheated oven for about 20-30 minutes (depending on the desired crispiness or gooiness).

Once cooled, cut the brownies into pieces and enjoy the whole pan. There would be no judgement if a spoon was grabbed and the whole pan was eaten either.
