Mini Savory Filled Puff Pastry

The perfect little appetizer or if you eat 10 of them, the perfect dinner!


Makes About: 20 miniature filled puff pastries 

Takes About: 1 hour

Difficulty: 1 out of 5 (not including the puff pasty)

Prep:

Make puff pastry a day ahead - you can follow the recipe here or find another. There are also a few options in the grocery store as well. I would never recommend store bought puff pastry, but puff pastry does take a long time. 

When the puff pastry is completed, grease a miniature muffin pan very well with butter. 

Preheat the oven to 350 degrees F. 

Ingredients:

Puff Pastry 

2 cups fresh spinach 

1/4 cup water

1 tablespoon olive oil

1 teaspoons minced garlic

4 tablespoons chopped onions

1/2 cup quartered little tomatoes 

salt 

pepper

2-3 tablespoons feta cheese

Instructions: 

- Step - Roll Out Puff Pastry

Roll out a piece of puff pastry until it is a few millimeters think and about 16 inches by 10 inches. Cut 20 individual 2 1/2 inch to 3 inch circles out of the dough.



Before placing the circles into the miniature muffin pan, stretch the circle slightly by pinching it. 

Once pinched, place the dough into the muffin tin and set the tin aside. 

- Step 2 - Fry the Spinach

Place the 2 cups of spinach and 1/4 cup of water into a large frying pan and cook the spinach until wilted. 

Once cooked, place the spinach into a strainer until needed. 

- Step 3 - Fry the Garlic and Onions

Heat 1 tablespoon of olive oil in a large frying pan.

Once the oil is heated, add the garlic and onions until slightly cooked - about 5 minutes on low heat. 

Once cooked, place the garlic and onions into a medium bowl. 

- Step 4 - Add Remaining Ingredients

Press all the water out of the spinach. If you do not do this, your pastry will not cool well and will end up extremely soggy.

Add the spinach to the onions and garlic. 

Add the sliced tomatoes and and season with salt and pepper to taste. 


- Step 5 - Spoon in the Filling

Spoon the filing into each danish until mostly full. 


- Step 6 - Bake

Bake the danishes in the preheated oven for about 10 minutes and pull the danishes out of the oven.

However, the danishes are not finished baking, so do not turn off the oven.

- Step 7 - Add Feta Cheese

Add a piece of feta cheese to the top of each danish.


- Step 8 - Bake Again

Place the danishes back in the oven for about 15 minutes longer or until the bottoms are browned. 

Place the danishes on a cooling rack to cook  until ready to eat. 


- Step 9 - Enjoy

Again, you can place these beautiful simple little danishes on an appetizer plate for a dinner party or put them on a plate to enjoy for yourself while you watch "Say Yes to The Dress" or "The Avengers."
