White Chocolate Red Velvet Cookies

I absolutely love red velvet cake, but red velvet cookies that have a cake like texture.

Um, yes please.

But let's take it a step further! Let us add some white chocolate!

I promise, you will never want to share these.

Makes About: 18 Cookies

Takes About: 1 hour

Difficulty: 1 out of 5 (so easy, anyone can do it)


Prep:

Preheat the oven to 350 degrees F (170 degrees C) and place a piece of parchment paper on a baking sheet and set aside.


Ingredients:

1/2 cup unsalted butter - room temperature

1/2 cup granulated sugar

1 1/2 teaspoon vanilla extract

1 egg

1/2 teaspoon red gel food coloring (add another teaspoon if you want a deeper red color - I personally like the maroon color more)

1 1/2 cup all-purpose flour

1/4 cup cocoa powder

1/2 teaspoon baking soda

1/2 teaspoon salt

5 teaspoons milk

150 grams white chocolate (I just use a chocolate bar)

Option - Gold Dust


Instructions:

- Step 1 - Cream the Butter and Sugar

In a large bowl, cream the 1/2 cup of butter until smooth and fluffy - about 2-3 minutes.

Add the 1/2 cup granulated sugar to the creamed butter and mix until completely incorporated - 2-3 minutes.

- Step 2 - Add Remaining Wet Ingredients - *Except Milk*

Add the 1 egg, the 1 1/2 teaspoons of vanilla extract, and the 1/2 teaspoon of red coloring to the the butter and sugar mixture.

And mix until the red is well incorporated - scraping down the sides periodically.

Set aside until needed.

- Step 3 - Combine all Dry Ingredients

In a medium bowl, mix together 1 1/2 cups of all-purpose flour, 1/4 cup of cocoa powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt.

And actually mix everything together.

- Step 4 - Combine Dry and Wet Ingredients

Add 1/3 cup of the dry ingredients to the wet ingredients and and mix until just incorporated. add another third and repeat, and add the last third until just incorporated.

The batter will be very dry, that is alright.

- Step 5 - Add Milk

Add the 5 teaspoons of milk into the batter and mix for just a few moments until just mixed in.

- Step 6 - Use Your Hands!

Continue mixing the batter with your hands until the batter is smooth.

- Step 7 - Add the Chocolate

Add the 150 grams of chocolate into the batter and mix well.

I used a chocolate bar and just broke is up into pieces. I liked this a lot, because then each piece of chocolate is different.

- Step 8 - Place an a Baking Sheet and Bake!

Make balls that are about 2 tablespoons large and place them about 2 inches apart a a large baking sheet. Press on them slightly to flatten them a little before baking.

Bake the cookies for about 10-12 minutes or until the bottoms are slightly brown.

- Step 9 - Enjoy!

Place these cookies on a cool looking plate, roll some chocolate in gold dust and sprinkle gold dust everywhere.

Kidding, just eat the cookies!
