Perfectly Sweetened Chocolate Cupcakes

These cupcakes are absolutely brilliant! Since moving to Germany I have heard multiple times that American cakes are way too sweet and so I decided to cut some sugar out and I have to tell you, it was absolutely brilliant!

This cake is just a perfect amount of sweetness, moist, and so fluffy.

I am telling you, you should definitely try it.

Makes About: 2 9inch round cakes

Takes About: 1 hour and 30 minutes

Difficulty: Easy


Prep:

Preheat the oven to 350 degrees F (175 degrees C) and butter an 9 inch round cake pan with a piece of parchment in the bottom.


Ingredients:

1 and 3/4 cups all purpose flour

3/4 cup chocolate powder

3/4 cup granulated sugar

1 teaspoon baking powder

2 teaspoons baking soda

1 teaspoon salt

2 eggs

1/2 cup vegetable oil

1 1/2 teaspoon vanilla extract

1 cup milk

1 tablespoon lemon juice

1 cup hot water


Instructions:

- Step 1 - Mix Lemon Juice and Milk

In a small bowl, mix together the 1 cup of milk and 1 tablespoon or lemon juice and set aside.

This will start to cuddle, that is okay because that is what you want.

- Step 2 - Mix All Dry Ingredients

In a large bowl, mix together 1 and 3/4 cups of all purpose flour, 3/4 cup of chocolate powder, 3/4 cup of granulated sugar, 1 teaspoon of baking powder, 2 teaspoons of baking soda, and 1 teaspoon of salt.

- Step 3 - Add in Everything Else but the Water

Add the 2 eggs, 1/2 cup of vegetable oil, 1 1/2 teaspoon of vanilla extract, and the milk and lemon juice mixture into the dry ingredients.

Try to mix well, but it will be difficult and thick. We just want to make sure the eggs are well mixed in, so when we pour in the water, it does not cook our eggs.

- Step 4 - Add Hot Water

Add the 1 cup hot water to the cake batter and mix very well.

Make sure you scrape the bottom of your bowl getting all the dry ingredients.

I know it does not look good now, but once all mixed, it will.

- Step 5 - Fill the Cake Pans

Spoon the batter into the prepared cake pans (or cupcake tins) and toss them into the oven for 25-30 minutes.

- Step 6 - Cool and Enjoy

This batter makes such a dark cake that is almost bitter, but it is delicious and is amazing with a semi-sweet frosting or a beautiful milk chocolate ganache.

- Cake Balls

To make cake balls, I broke the cake into very fine crumbles and mixed in chocolate ganache.

I mixed in just enough chocolate ganache for the cake to hold into a firm ball without falling apart.
