Soft Molasses Cookies

These are beautifully spiced and amazingly soft cookies. Don't just have one, but have three, or more?


Makes about: 24-30 cookies

Takes about: 2 hours

Difficulty: 1 out of 5

Ingredients:

3/4 cup unsalted butter - room temperature

1/2 cup granulated sugar

1/2 cup brown sugar

1/4 cup molasses

1 egg

2 1/4 cup all purpose flour

2 teaspoons baking soda

1 teaspoon cinnamon

1/2 teaspoon salt

1/2 teaspoon ginger

1/2 teaspoon cloves

1/4 teaspoon nutmeg

1/4 cup extra granulated sugar for coating

Instructions:

- Step 1 - Start Mixing

In a large bowl, cream the 3/4 cup butter.


- Step 2 - Add the Sugar

Add the 1/2 cup of granulated sugar and the 1/2 of brown sugar until light and fluffy.



- Step 3 - Molasses and Egg

Add the 1/4 cup of molasses and the 1 egg until dark in color.



- Step 4 - Mix all Dry Ingredients

In a medium bowl, sift together the 2 1/4 cup of flour, 2 teaspoons of baking soda, 1 teaspoon of cinnamon, 1/2 teaspoon of salt, 1/2 teaspoon of ginger, 1/2 teaspoon of cloves, and 1/4 teaspoon of nutmeg.



- Step 5 - Mix Together Dry Ingredients and Wet Ingredients

Add half the dry ingredients into the wet ingredients until incorporated.



Add the other half of the dry ingredients to the wet ingredients and mix with a spatula until completely Incorporated.



- Step 6 - Wrap and Refrigerate

Wrap the dough in a piece of plastic wrap (flatten it slightly) and place the dough into the refrigerator for 1 hour.

While the dough is in the refrigerator, preheat the oven to 375 degrees F and place a piece or parchment paper on a cookie sheet.


- Step 7 - Roll, Cover, and Bake

Cover a plate with 1/4 cup of granulated sugar.


Roll pieces of dough into 1 tablespoon balls and roll them into the sugar until covered.


Place the sugar coated balls onto the prepared cookie sheet keeping them about 3-4 inches apart. They spread a lot.


- Step 8 - Bake the Cookies

Bake the cookies for about 10 minutes, or until the tops have cracked and the bottoms have colored slightly.

Cool on a rack.


- Step 9 - Have a Cookie Party!

These cookies are absolutely, mouth watering, delicious.
