Biscuit Cake

Beautiful, simple (cookie) cakes, that are perfect for a tea party, or coffee and kuchen, or just a nice little snack.


Makes About: 15-20 large cookie cake stacks or a large cake and a few small cookie cake snacks

Takes About: 2 hours

Difficulty: 2 out of 5

Prep:

Preheat the oven to 350 degree F.

Ingredients:

Cookie-

185 grams unsalted butter - room tempature

1 cup caster sugar

1 1/2 teaspoons vanilla paste

2 1/2 cups all-purpose flour

1 egg

1 egg yolk

Icing-

175 grams powdered sugar - room temperature

370 grams cream cheese

25 grams unsalted butter - room temperature

splash of vanilla extract

Berries for decoration

Instructions:

- Step 1 - Start the Batter

In a large bowl, mix together 185 grams of butter, 1 cup of caster sugar, and 1 1/2 teaspoons of vanilla paste until fluffy and well mixed.



- Step 2 - Add Remaining Ingredients

Add the 2 1/2 cups of flour, 1 egg, and the egg yolk until completely combined.


The dough will not be sticky, it will feel more like corn meal.


- Step 3 - Knead a Ton

Dump the dough onto the counter and start to knead - this can take 10 minutes or more.


It may seem dry, but do not add water, just keep pressing the dough together until it comes together and forms a solid ball of dough.


- Step 4 - Wrap and Refrigerate

Wrap the kneaded dough in cling wrap and refrigerate for 30 minutes.


- Step 5 - Roll Out

Break the dough into quarters and take the first quarter and roll out 1/2 of an inch thick


- Step 6 - Cut

Using a cookie cutter or biscuit cutter, cut rings out of the rolled out dough.


Use the small circles, the large rings, and also the large circles with the middles not cut out.

- Step 7 - Bake!

Bake the cookies on the middle rack for about 10 minutes or until lightly brown.

Cool completely before decorating.


- Step 8 - Roll Out and Cut

Roll out the remaining 3/4 of the dough and use the cutter to cut the remaining dough.

- Step 9 - Make Icing

In a medium bowl, mix 175 grams of powdered sugar, 370 grams of cream cheese, 25 grams of butter, and a splash of vanilla extract until light and fluffy.



- Step 10 - Decorate the Cookies

Pipe the frosting in a circle around the cookies.


Make sure to do the piping in dollops.

Add another cookie atop of this ring and pipe the frosting around this one as well.


Place one last cookie on top and pipe another ring of frosting over it and decorate with berries.


- Step 11 - Enjoy

These cookies can be decorated in many different ways. Try a few ways out and have fun with it!
