Chocolate Beer Bundt Cake

Lovely, rich, chocolate delicacy that has the taste of a brownie, but the texture a dense cake.
Add the raspberries and it becomes a whole new world.

Makes: 1 Bundt Cake
Takes: 1.5 hours - 2 hours
Difficulty: 1.5 out of 5
Ingredients:
1 cup dark beer
1/2 cup unsalted butter
2 eggs - beaten
3/4 cup sour cream
2 1/4 cup flour
1/2 tablespoon baking soda
3/4 teaspoon salt
1 cup cacao powder
1 1/2 cup granulated sugar
Prep:
Grease a bundt pan well and preheat the oven to 375 degrees F.
Instructions:
- Step 1 - Boil the Beer
Place the 1 cup of beer and the 1/2 cup of unsalted butter into a small sauce pan and bring to a simmer.


Let the beer simmer for about 10 minutes and then pour into a large bowl and let rest for another 10 minutes or until cool.

- Step 2- Mix Eggs and Sour Cream
In a small bowl, whisk the two eggs.

Once mixed, add the 3/4 cup of sour cream and mix until completely incorporated.


Set aside until needed.
- Step 3 - Mix In Cacao
Once the beer and butter mixture has cooled, sift in 1 cup of cacao and 1 1/2 cups of sugar directly into the mixture.

- Step 4 - Ad Sour Cream and Egg Mixture
Pour the sour cream and egg mixture into the beer batter and mix until combined.

- Step 5 - Sift in Dry Ingredients
In the large bowl with the beer batter, sift in 2 1/4 cups of flour, 1/2 tablespoon of baking soda, and 3/4 teaspoon of salt.


- Step 6 - Spoon Batter into Bundt Pan
Spoon the chocolate batter into the pre-greased bundt pan, then making sure it is spread out evenly.

- Step 7 - Bake the Bundt Cake
Bake the cake for about 40-50 minutes or until a toothpick comes out clean.

- Step 8 - Cool and Slice
Once the cake has cooled down for an hour or so, tip the cake onto a cooling rack and shake slightly until it falls out.
If greased properly, it should come out easily.
- Step 9 - Chop off the Bottom
Once the cake has cooled completely, cut off the bottom (which was the top while baking) so it sites evenly on a flat surface.


- Step 10 - Decorate and Enjoy!
Doing a simple decoration on this cake is great.
Some people do a glaze or a thin frosting. I just washed some raspberries and placed them in the middle of the bundt cake and then sprinkled powdered sugar over the whole thing.

Simple, but beautiful and delicious.
