Soft, delicate, and sweet. These cookies are perfect for the holidays and any other day.

Makes About: 25-30 cookies

Takes About: 20 minutes (for prep and 1 batch)

Difficulty: 0.5 out of 5

Prep:

Preheat the oven to 400 degrees F and place a piece of parchment paper on a baking sheet.

Ingredients:

2 1/2+ 1/3 cup (475 grams) all-purpose flour

2 teaspoons cream of tartar

1 teaspoon baking soda

3/4 teaspoons salt

1 cup (226 grams) unsalted butter - room temperature

1 cup (250 grams) granulated sugar

2 large eggs

optional: 1/4 teaspoon vanilla extract

3 teaspoons ground cinnamon

1/4 cup (60 grams) granulated sugar

Instructions:

Step 1 - Mix the Dry Ingredients

In a large bowl, mix 475 grams of flour, 2 teaspoons of cream of tartar, 1 teaspoon of baking soda, 3/4 teaspoons of salt in a large bowl and set aside until needed later.

Step 2 - Mix Butter and Sugar

In a medium bowl, cream the 226 grams room temperature unsalted butter until light and fluffy - about 2-3 minutes.

Mix in the 250 grams of sugar until light and fluffy - about 3-4 minutes.

Step 3 - Mix in the Eggs

Add the 2 large eggs into the butter and sugar mixture and blend until well mixed.

Step 4 - Mix in Dry Ingredients and Set Aside

Slowly mix in the flour mixture 1/3 at a time.

The cookie batter will start to get thick and difficult to mix, so with the last 1/3 use a spatula to mix the remaining flour into the batter.

Once all mixed together, set aside.

Step 5 - Mix Sugar and Cinnamon

In a small bowl mix 3 teaspoons of ground cinnamon and 60 grams of granulated sugar.

Step 6 - Make Cookie Balls

Make balls that are about 2-3 teaspoons big.

Make every single ball before rolling them in the cinnamon and sugar mixture. This prevents a mess.

Step 7 - Roll Cookie Balls in Sugar and Cinnamon

Roll each ball into the cinnamon and sugar mixture until completely coated.

Step 8 - Bake

Place the balls on a baking sheet about 2 inches apart and bake for 8-9 minutes.

If you like the cookies crunchier, bake the cookies for 9-10 minutes.

Tip: Start with less time and add more time if you wish to have the cookie crunchier.

Step 9 - Eat and Share

Enjoy every bite of these delicious and delicate cookies.

The cookies on the left side, that are a little darker, were baked for 9 minutes. The ones on the right, that are lighter, were baked for 8 minutes and are a little softer.
