Yes, I know this mix is not baked, but sometimes you just need a sugar rush and sometimes you need it quick.
What a delicious, addictive, treat that everyone loves to eat by the spoonful.

Makes About: 8 - 10 cups

Ingredients
12 ounces Chex cereal
12 ounces semi-sweet chocolate
1 cup creamy peanut butter
1/2 cup unsalted butter
1 teaspoon vanilla extract
1.5 - 2 pounds powdered sugar
Instructions
- Step 1 - Dump Chex into a Big Bowl/Cake Pan/Garbage Bag
Pour 12 ounces of Chex cereal into a cake pan or something that can contain all the cereal and be mixed easily without spilling it.

- Step 2 - Melt Everything
In a double boiler add 12 ounces of semi-sweet chocolate, 1 cup of creamy peanut butter, and 1/2 cup of unsalted butter till completely melted and smooth.



- Step 3 - Add Vanilla
Pull the bowl of chocolate off the double boiler and let sit on something that can handle high heat (like an oven mitt) and add 1 teaspoon of vanilla extract and mix until combined.

- Step 4 - Pour Melted Chocolate All Over Chex
Pour the chocolate mixture over the chex and mix well.

It takes some time to get the chocolate over all the chex. Make sure you take your time. You want your chex to still be whole, but completely covered.
I ended up using my hands after awhile because my spoon kept throwing chex everywhere.

- Step 5 - Dump Powdered Sugar Over Chex and Mix Welll
After your chex is completely covered with chocolate, dump 1.5 pounds of powdered sugar over the chex and mix well, but slowly, so the chex does not break and turn into mush.

If your chex is not completely covered keep adding more powdered sugar until everything is completely white with powdered sugar.
Large chunks are always yummy.

- Step 6 - Enjoy it All - By the Handfuls
Store the chex in an airtight container on the counter or put some in the freezer.
The chex is really great in the summer if stored in the freezer.

I believe I received this recipe from my sister over the phone, so I don't know where this came from. I do know that a lot of people know that all this recipe contains is rice cereal, peanut butter, vanilla extract, chocolate, and powdered sugar.
