Origin: Finish Christmas Jam Tarts
These cookies have such a flaky and fluffy texture that holds the sweetness of the powdered sugar and the tartness of the fig jam. Eat 1 or eat 20 they are amazing every time.

Makes About: 30 Cookies

Prep:
Preheat oven to 435 F.
Ingredients:
250 grams unsalted butter - room temperature
250 grams flour - sifted
250 grams light ricotta
Jar of Fig Jam (or any jam that you prefer)
1 egg
Powdered sugar for dusting
Instructions:
- Step 1 - Mix Butter and Flour
In a large bowl mix 250 grams of unsalted butter and 250 grams of flour till it becomes crumbly.



- Step 2 - Mix In Ricotta
Add the 250 grams of light ricotta to the crumble you just made till it becomes a sticky dough.


- Step 3 - Refrigerate
Wrap the dough in plastic wrap and place in the fridge for 30 minutes.


- Step 4 - Roll Out Dough
Roll 1/3 of the dough out into a large square.



- Step 5 - Cut Dough
Trim the edges of the dough until all the corners are 90 degree angles. Cut that square into smaller squares that are about 3 inches by 3 inches.

I rolled these squares out a little more to make them a little thinner, but they should be about a 1/4 inch thick.
Once the the square is at your desired size cut each corner towards the middle, but not to the middle. (See picture below).

- Step 6 - Add The Jam
Place a teaspoon of fig jam (I used orange and fig jam) in the middle where you did not cut the dough.

- Step 7 - Fold in Every Other Corner
Fold one side of the cut corner toward the middle. I did the left cut side off each corner.

You'll fold every other corner or every left cut side toward the middle and press them together. You can use the egg in step 8 to glue the corners together.



- Step 8 - Brush on Egg
Whisk the 1 egg lightly and brush the egg over the top of the cookie.

- Step 9 - Bake
Bake the cookie for about 10-12 minutes.
This cookie will burn easily, so watch it closely.
- Step 10 - Cool
Once golden brown, pull out of the oven and cool slightly on the baking sheet and then transfer to a cooling rack and cool completely.

- Step 11 - Dust on Powdered Sugar
Once the cookies have cooled completely dust powdered sugar over the tops and then serve/enjoy!

Also, not all of them will come out perfectly, but they still taste amazing.

I found this recipe on "Cake Crumbs and Beach Sand" and the pictures were really great to follow. I followed the dough recipe really close, but made my own filling recipe.
