Miniature Muffin Surprise Cookies

What a delicious cookie with a great surprise hidden on the inside. My surprise - kinder chocolate.

These were solid on the outside, but soft on the inside, with a great chocolate bite hidden in the inside.


Makes About: 24 cookies

Time: 2 hour

Difficulty: 1 out of 5

Prep:

Preheat your oven to 350 F and grease your miniature muffin pans with butter.

Ingredients

2 1/4 cup four - sifted

1 teaspoon baking soda - sifted

1 1/2 teaspoons cornstarch - sifted

1/2 teaspoon salt

3/4 cup brown sugar

1/2 cup granulated sugar

3/4 cup butter - melted

1 egg and 1 egg yolk (you will not be using the egg white so use it as a face mask)

1 teaspoon vanilla extract

3.5oz (100 grams) Kinder Chocolate bars

Instructions

- Step 1 - Mix Your Dry Ingredients

In a large bowl sift 2 1/4 cups of four, 1 teaspoon of baking soda, 1 1/2 teaspoons of cornstarch, and 1/2 teaspoon of salt.


- Step 2 - Mix Your Sugar

In a medium bowl mix 3/4 cup of brown sugar and 1/2 cup of granulated sugar.


- Step 3 - Melt and Add Your Butter

In a small pan, on low heat, melt 3/4 cup butter.



Once melted add the butter to the sugar and mix until combined.



- Step 4 - Add Eggs

Add 1 egg and 1 egg yolk to the sugar and butter mixture.

You will not be using the egg white, so do whatever you want to do with it. You can make frosting if you like.



Once the eggs are mixed in add the 1 teaspoon of vanilla extract.


- Step 5 - Mix Dry and Wet Ingredients

Mix the wet and dry ingredients with a wooden spoon till it starts to form a dough.


- Step 6 - Refrigerate

Continue mixing with your hands till you form a dough ball and then wrap it in plastic wrap and refrigerate for at least an hour - the best is refrigerating overnight.




- Step 7 - Make Small Balls

Once your dough has been in the fridge for about an hour start to shape inch round balls for your miniature muffin hole.


- Step 8 - Shape the Balls in the Miniature Muffin Tin

Start to shape the balls into the muffin tins to create a little cavity in he middle of your dough ball.


Take any extra dough off the top so it sits inside each muffin hole and does not sit above the lip.

- Step 9 - Fill the Shaped Cookies with Kinder Chocolate

Either chop or break apart your 3.5oz (100 grams) of Kinder Chocolate bars and start to fill your dough holes.


I was only able to fit about 1 - 2 kinder pieces in each.

- Step 10 - Roll out the Remaining Cookie Dough and Cut Toppers

Roll the rest of your remaining dough out flat so you can cut small circles of dough to create toppers for your cookies. Roll it out to about 1/8 - 1/4 inch thick.


I used a frosting piping tip because it was the only thing that I had that was about the same size as the openings of each muffin hole.

- Step 11 - Top Cookies in Tin with Circle

Use your cut circles to cover the tops of your cookies and seal the cookie closed by pressing down slightly on the edges and tucking them in.


- Step 12 - Bake

Place the cookies on the middle rack in the middle of the the oven.


Bake the cookies for about 15 minutes or until the tops are golden brown. You want your cookies to be completely cooked through, so your tops should be firm.


- Step 13 - Eat Them All

Before taking the cookies out of the tin wait for them to cook and spin them to make sure they are not sticking to the tin.

Once cooled, take them out of the tin and let them rest on a cooling rack, but at this time, you can eat all of them.
