Aussie Bites

These are tasty little sweat and healthy treats that I can easily eat ten of.

Everyone I gave these to loved them as well. They are healthy-ish and SO tasty.

I originally found them at Costco and realized they are a lot cheaper to make than buy.


Makes About: 60-72

Time: Unknown

Difficulty: 2 out of 5 (1 being cookies in a tube - ready bake cookies)

Prep

Preheat the oven to 350 F. Grease the mini muffin pan, only 24 holes if you have a crazy big one, with canola oil (yes, you actually will use the canola oil in the recipe too).

Ingredients

1 cup rolled oats

2/3 cup rolled oats

1/4 cup white sugar

1/4 cup dried apricots (cut to the same size as the raisins)

1/4 cup raisins

1/4 cup ground flaxseed

1/4 cup unsalted sunflower seeds

1/4 cup unsweetened shredded coconut (I used 1/4 cup sweetened because I grabbed the wrong stuff)

1/4 cup cooked quinoa (You can also used uncooked if you don't want to cook yours)

2 tablespoons chia seeds (way cheaper to buy bulk)

1/4 teaspoon baking soda

1/4 cup honey

1/4 cup unsalted butter - melted

1/4 cup canola oil

1/2 teaspoon vanilla extract

Instructions

- Step 1 - Grind

Place 1 cup of rolled oats in a food processor and grind till it is a powder.


From that to this.


I actually had to go buy a food processor because there was no way I could chop the oats to the fine dust I needed them to be.

- Step 2 - Blend

In your food processes add the 2/3 cup rolled oats, 1/4 cup white sugar,1/4 cup dried apricots that you've cut,1/4 cup raisins,1/4 cup ground flaxseed,1/4 cup unsalted sunflower seeds, 1/4 cup unsweetened shredded coconut,1/4 cup quinoa, 2 tablespoons chia seeds, and 1/4 teaspoon baking soda. Blend till the raisins and apricots in little pieces.

- Step 3 - In A Large Bowl - MIX!

Dump the dry blend from the food processor into a large bowl and mix in the 1/4 cup honey, 1/4 cup melted unsalted butter (I melted mine in a pan on low heat so it melts evenly), 1/4 cup canola oil, and 1/2 teaspoon vanilla extract.



Mix well till completely blended and completely mixed together.

- Step 4 - Fill Your 24 Count Mini Muffin Pan

Divide your mix evenly between the 24 mini muffin holes.


- Step 5 - Bake

Place the aussie bites in the oven and bake for 10 to 13 minutes. They will be slightly crispy and golden brown. It will be hard to tell because the aussie bites are already brown, but the edges of these bites will be golden brown.

- Step 6 - Cool

Let the bites cool in the pan completely before turning the pan over and dumping out the bites on a wire rack. If you don't let them cool completely the bites will fall apart.

- Step 7 - Eat All of Them

These treats only last a few days - about 4 or 5 days. Place them in an airtight container when you are not enjoying these yummy bites.


I saw these first in Costco and needed to make them, but had no idea where to start, thankfully "The Stay at Home Chef" had a recipe I could follow and do some of my own steps and add steps that might help any baker.
