Blueberry Muffins

Delicious, beautiful, blueberry muffins that are soft and fluffy on the inside.

Prep:
Place muffin papers into a muffin tin and preheat the oven to 400 degrees F.
Ingredients:
2 1/4 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup granulated sugar
1/2 cup unsalted butter - melted
1 large egg
1 cup sour cream
1 cup blueberries
1 teaspoon vanilla extract
sliced peaches - optional
Instructions:
- Step 1 - Mix Dry Ingredients
In a large bowl, mix together 2 1/4 cups flour, 1 teaspoon baking soda, 2 teaspoons baking powder, 1/4 teaspoon salt, and 3/4 cups granulated sugar until well mixed.

- Step 2 - Mix the Wet Ingredients
In a separate bowl, mix together 1 egg, 1 cup sour cream, and 1 teaspoon vanilla extract


- Step 3 - Mix in Melted Butter
Add melted butter to the wet ingredients and mix well.


- Step 4 - Add Dry Ingredients
Add the dry ingredients to the wet ingredients slowly.

The batter will become thick quickly, so using a spatula will be ideal.

- Step 5 - Add Blueberries, Carefully
Add the blueberries into the batter and mix carefully to not break the blueberries.


- Step 6 - Fill Muffin Wrappers
Spoon the batter into the muffin wrappers until they are 3/4 of the way full.

- Step 7 - Add the Peaches - Optional
Add a piece of peach to the top of the muffins if desired.

- Step 8 - Bake The Muffins!
Place the muffins into the oven and bake them for about 20 minutes until a toothpick comes out clean.


- Step 9 - Enjoy!
Enjoy these beautiful muffins warm or cooled, either way, they are delicious.
