Alaskan IPA Beer Brownies

Beer brownies may have a different origin than original brownies, but I'm guessing it is American as well.
Chocolaty dense brownies that hold a great flavor due to the delicious beer that heightens that chocolate flavor.

Makes About: 30 Brownies
Time: 1 hour

Prep:
Preheat the oven to 375 F, grease a 9 inch by 5 inch baking pan, and then lay a piece of parchment paper on the bottom.
Ingredients:
1 cup dark beer (I used Alaskan Spruce IPA)
1/2 cup unsalted butter
1/2 cup + 1 tablespoon unsweetened cocoa powder
1 cup + 2 tablespoons granulated sugar
2 ounces unsweetened chocolate - chopped
1 large egg white - you won't need the egg yolk
1 teaspoon vanilla extract
1/4 teaspoon salt
4 tablespoons of the concentrated beer
1/2 cup flour
Instructions:
- Step 1 - Concentrate the Beer
Pour 1 cup of dark beer in a small sauce pan and let simmer until it reduces to about 1/3 of a cup.
It will take about 20 minutes to do so, so go ahead and start on step 2. While you are doing the other steps keep an eye on the beer to make sure it does not burn and once it seems to have reduced enough pull off the heat till needed.


- Step 2 - Use the Double Boiler
In a double boiler add 1/2 cup of unsalted butter, 1/2 cup + 1 tablespoon of unsweetened cocoa powder, 1 cup + 2 tablespoons of granulated sugar, and 2 ounces of chopped unsweetened chocolate and melt down.

- Step 3 - Mix Well
Mix until the chocolate becomes a substance that visually looks like a thick sand goo.
Mix the goo until all the butter and chocolate has melted completely and all your powder is mixed in well.

- Step 4 - Take Off Heat
Take your chocolate mixture off the double boiler and let cool for about 1 minute.
- Step 5 - Mix in the Concentrated Beer and a Few Other Things
Once your chocolate mixture has cooled mix in the 1 large egg white, 1 teaspoon of vanilla extract, 1/4 teaspoon of salt, and 4 tablespoons of the concentrated beer that has been reduced.

Mix the chocolate batch until your goo starts to become more of a liquid.
It will look shiny and smooth.

- Step 6 - Stir in Flour
Stir in the 1/2 cup of flour and mix extremely well.
While you are mixing your chocolate mixture you are trying to activate the gluten in the flour, so mix about 75 times.


- Step 7 - Pour in Baking Pan
Pour the batter into the baking pan and spread it out to reach all corners also is flat. You want it to cook evenly.

- Step 8 - Bake
Bake in the preheated oven for about 40 minutes.
To test if it is done, stick a toothpick into the center and see if it comes out clean.if it comes out clean, it is done.
- Step 9 - Cool
Cool the brownies in the baking pan for 30 minutes and then transfer to a cooling rack to cool completely.

- Step 10 - Cute and Enjoy!
Cute the brownies to the desired size and eat them all.


Picked up this recipe from "Joy the Baker," but changed the instructions because I wanted gooier brownies.
