Vegan Skinny Chunky Monkeys

These cookies are great for the banana lovers and for when you need a large protein pick-me-up after a work out.

Just imagine, after a long run and you need a little energy, you take a bite into this banana chocolate cookie that satisfies that hungry without making you feel guilty.


Makes About: 18-24

Time: 30 minutes

Difficulty: 1.5 out of 5 (1 being cookies in a tube - ready bake cookies)

Bakers Note: My friends who worked out loved these. People who hated working out didn't. People who didn't care one way or the other didn't have an opinion.

Prep:

Preheat the over to 350 F

Ingredients:

3 ripe bananas

2 cup oats

1/3 cup peanut butter

1/4 cup apple sauce

1/4 cup cocoa

1/3 cup vegan chocolate chip

Instructions

- Step 1 - Mash Those Bananas In a large bowl smash 3 ripe bananas till the are squishy.


- Step 2 - Add the Rest On top of the smashed bananas add the 2 cup of oats. Use oats that are bigger for a better texture.


Add the 1/3 cup of peanut butter, 1/4 cup of apple sauce, and a 1/4 cup of cocoa.


- Step 3 - Add the Chips

An option that I didn't do, but I think would bring these cookies to the next level is adding those chocolate chips. The only sugar that is in this recipe is what is in the ingredients that we have in the bowl. The one thing people kept telling me was that on the first bite it was good, but there was no pop at the end. The vegan chocolate chips would make this cookie a bit sweeter, but add a little more guilt. Also, if you don't want vegan you can use normal chocolate chips as well.

Add 1/3 cup of vegan chocolate chip. - Step 4 - Mix Very Well

Using a large spoon, a mixer, or your hands mix all the ingredients until it is combined well.


- Step 4 - Bake

Make cookies that are about 2 tablespoons big and place them about 2 inches apart on a cookie sheet.


Bake for 10-12 minutes. - Step 5 - Enjoy!

They will be a little darker than when you put them in the over.


Let cool for about a minute on the cookie sheet and then transfer to a cooling rack.

Eat one of them or all of them and you won't feel guilty!!!


This recipe was found on "Food." I followed the recipe pretty closely because I've never heard of these healthy treats.
